Replacement Parts for Shimano 200gs

After an unpleasant incident involving my commuter motorcycle and a stopped vehicle, I find myself back to walking, bus-riding, and, best of all, bicycling. To get around, I broke out my old Diamondback Sorrento, vintage 1991, and got to pedalling. My problem with this involves 20 years of poor to nonexistant maintenance, meaning that eventually I'm going to have to replace parts. So far, everything still working, mostly. The rear brakes squeal, the front derailer only works on two of the three gears, the rear derailer only skips 1 of 7, and the seat post is completely frozen in place. Technically, though, it gets me down the road.
Obviously, I could just buy a new bike. But, I've had this guy for 28 years and I'm kind of attached. Downside is, once I start replacing drivetrain bits, it looks like I'm going to have to replace everything. So, i guess my question is which Shimano set works best as a replacement for the old 200gs the bike came with? Purpose of the bike is urban riding, with roads, sidewalks, and dirt paths.
