Meatball kebabs with tomato sauce
(Serves four)
- YOU NEED:
575g beef mince - 90g finely chopped onion
- 400g jar of tomato pasta sauce
- 3g oregano/dried herbs (optional)
- 4 sub rolls, hot dog buns or pitta breads
- 4 cheese slices (optional)
METHOD:
- Mix the finely chopped onion with the mince and season with salt and lots of pepper. Shape into meatballs and place on a skewer.
- Grill the meatballs and cook each side for five to six minutes while heating up the tomato sauce.
- Add the meatballs on skewers to the tomato sauce and cook until the sauce has reduced and thickened.
- Serve in pittas or in a baguette or subway roll – they are great with sliced cheese, coleslaw or salad on the side.

Barbecue chicken with charred red & wild rice peppers
(Serves two)
- YOU NEED:
300g chicken breasts - 1 can of kidney beans
- 30g harissa paste
- 1 lime
- 220g long-grain & wild rice
- 1 red pepper
- 1 red chilli
- 15g parsley
- 1 tsp olive oil
METHOD:
- Preheat the oven to 180C.
- Roughly chop the chillies. Zest the lime and squeeze half the juice into a bowl, then mix with the harissa paste, chopped chilli and seasoning to create the marinade. Cut the remaining half lime into wedges for serving.
- Score the chicken a few times across the top of the breast, then coat all over with the marinade and leave for at least five minutes. The longer the chicken is left in the marinade, the more flavour it will take in.
- Cook the chicken in the oven on greaseproof paper for ten to 12 minutes, then remove and finish on the barbecue until piping hot.
- Roughly chop the parsley. Quarter the pepper, cut out the seeds and stalk, then rub a teaspoon of oil and some seasoning on to it. Add the pepper to the barbecue and cook for one minute on each side.
- Drain the kidney beans and microwave in a bowl for two to three minutes. Microwave the rice according to packet instructions. Once cooked, mix them together, along with the parsley and seasoning.
- To serve, make a bed of rice and beans, then add slices of red pepper, top with slices of chilli chicken and serve with wedges of lime.

- Get five selected salads or deli items for £10 at M&S including large baby potato salad, 380g, £2.25, and Cornish cove mature cheese slices, 160g, £2.25.

Halloumi kebabs with mixed pepper rice
(Serves four)
YOU NEED:
- 1 green pepper
- 1 red pepper
- 1 yellow pepper
- 500g halloumi
- 1 red onion, cut into wedges
- 2 courgettes, cut into 2cm chunks
- 3 tbsp pesto
- 2 tbsp olive oil
- 2 packets microwaveable long- grain rice
METHOD:
- For each pepper, finely chop one half and cut the other half into chunks.
- Toss the pepper chunks, halloumi, red onion wedges and courgettes with the pesto sauce then thread on to eight skewers.
- Heat the oil and fry all the finely chopped peppers for five minutes until softened. Add the rice and cook for a further five minutes until piping hot.
- Meanwhile, grill the kebabs for six to eight minutes, turning frequently, until the edges begin to char.
- Serve two cooked kebabs per portion with the pepper rice.
