Treat your family to quick & easy meals with Mrs Crunch’s favourites
ARE you eating out to help out? The Chancellor’s Corona meal deal has seen record numbers of diners flock to restaurants this week.
Morrisons is doing its bit with kids eating free in the in-store cafes, plus extending the Eat Out to Help Out scheme for the whole week.
But what about the days when you’re dining at home? Here are three quick and easy kids favourites the whole family will love.
Tuna And Sweetcorn Burgers
(Serves 4 – £1.92 per serving)
Preparation time: 20 minutes.
Cooking time: 8 minutes.
YOU NEED:
- 1 tin tuna chunks in spring water
- 15g butter
- 4 spring onions, finely chopped
- 400g mashed potato, cold
- 100g sweetcorn, thawed if frozen
- 1tbsp fresh chives or parsley, chopped
- 1 drizzle vegetable oil, for frying
- 1 egg
- 4 seeded burger buns, split through the middle
- Small handful lettuce
- Small handful chopped cucumber
- Small handful chopped tomato
- 1 dusting plain flour
- Salt and pepper
METHOD: Drain the can of tuna and break into chunks on a plate. Set aside.
Gently fry the spring onions for two to three minutes in the butter.
Cool slightly, then mix into the potato with the sweetcorn and chives or parsley.
Add the tuna, season with salt and pepper and mix.
Form into four burgers and coat them lightly in plain flour.
Beat the egg in a shallow bowl.
Dip the burgers in the egg and coat them in the flour once more. Chill until ready to cook.
Heat the vegetable oil in a large frying pan and shallow fry the burgers for three to four minutes per side, until golden brown.
Toast or chargrill the cut sides of the burger buns, then add the tuna burgers and serve with lettuce, cucumber and tomato.
Add salt and freshly ground pepper to taste.
Chicken Casserole
(Serves 4 – £1.58 per portion)
Preparation time: 5 minutes.
Cooking time: 1hr.
YOU NEED:
- 1 tbsp vegetable oil
- 1 tbsp cornflour
- 1 bag frozen diced chicken breast (500g)
- 1 bag frozen casserole mix (1kg)
- 1 chicken stock cube
- 1 dash salt
- 1 dash pepper
- 1 heaped tbsp frozen mashed potato
- 1 handful frozen green beans
METHOD: Brown the frozen diced chicken in a pan with the oil and cornflour.
Add the meat and the full bag of frozen casserole vegetables to a casserole dish.
Add the stock cube mixed with the 400ml of hot water.
Cover and cook in a pre-heated oven for one hour at 200°C/400°F/fan 180°C/gas mark 6.
Season to taste and serve with frozen mashed potato and fine green beans.
You could even add dumplings as a little extra treat.
Gooey Chocolate Brownie Mug Cake
(Serves 4 – 95p per serving)
Preparation time: 5 mins.
Cooking time: 25 mins.
YOU NEED:
- 4 large eggs
- 4 tbsp chocolate spread
- 125g self-raising flour
- 4 handful mini marshmallows
METHOD: In a bowl, whisk the eggs until smooth.
Add the chocolate spread and self-raising flour and mix together into a smooth paste.
Add a small handful of marshmallows and mix.

Divide the mixture into four mugs.
Microwave each mug for around one minute then leave to cool for 25 to 30 minutes to create the desired chewy centre.
Top the brownie with a few more marshmallows for an extra treat. Serve and enjoy.
