I’m a chef – here’s the most common mistake when cooking pasta and how to easily fix it
COOKING pasta is pretty foolproof, or so you might think.
According to one chef there are plenty of mistakes that we’re making when it comes to the Italian staple.
Celebrity chef Aldo Zilli explained that overcooking your pasta is the most frequent error he encounters, both with professional and amateur cooks.
But luckily there is a very easy fix.
Speaking to the Mirror, he explained: “A lot of restaurants precook it (pasta) then serve it overcooked.
“The cooking of pasta needs to be finished in the sauce.

“If you are making pasta, cook it two minutes under, then add it to the sauce with cooking water and finish the cooking in the sauce, so the pasta has got a chance to absorb all the flavours.”
Zilli added that cooked pasta should never be rinsed under cold water as this washes away the starchiness which helps to bind the sauce as well as the flavour of the pasta itself.
According to Taste.com.au there is also a simple way to prevent overcooking pasta bakes.
Some people find that their pasta is too soft when they serve their pasta bakes.

This can be prevented by undercooking your pasta for a few minutes, as it’ll carry on cooking in the oven.
Taste also warns that getting the pasta to water ratio correct is essential for a well cooked pasta.

Pasta needs a lot of room to expand while it cooks, so a large pan is essential.
This will prevent it from sticking together in the boiling water.
You should also stir regularly to get an oven cook and to prevent any clumping.
