I baked my biggest cake yet – it took 60 eggs and 15kg of icing to make

A CAKE decorator had to dig deep for her latest creation – a hyper-realistic JCB that required five people just to move it.

Christie Boyle is well known for her ridiculously lifelike designs and loves a challenge.

But the 30-year-old, who made a wedding cake for comedian Kevin Bridges, had never baked anything this big before.

The mammoth masterpiece – created for construction firm Scot JCB – weighed around four stone, measured more than three feet and could only be delivered in a trolley pushed by Christie and pals.

Christie, who runs Cake Days a Week in Glasgow’s East End, says: “It was quite intense for a full week, it was around 30 hours to make the cake.

“It was pretty solid and weighed an absolute tonne.

“But my kitchen was right across the road from the venue thankfully.

“We catered for 200 people but I think it would have done 250.

“It was an old fashioned vanilla sponge with strawberry jam and white chocolate ganache.”

Christie reckons the hardest part of the cake build was doing the backhoe – the digging part of the JCB.

As it’s such a big part of the tractor and is freestanding, it was covered in icing which hid an inedible support system and polystyrene anchor underneath.

It needed around 15kg of icing, 60 eggs and so much flour that Christie can’t even begin to guess her measurements.

But she hopes to go even bigger if more opportunities come her way.

She adds: “I would love to. I really love the challenge. I’ve managed to get to a level that I specialise in bigger cakes.

“The higher the better, I love doing something different and that nobody else can do.”
