My low-calorie chicken enchilada loaded potatoes make your weight loss goal seem ‘easy peasy’
A FITNESS fanatic and health food enthusiast has shared one of her favorite recipes.
The TikToker demonstrated how to make low-calorie chicken enchilada loaded potatoes.
In her video, TikTok user Alex (@alexkbfitfood) took her followers along as she made the healthy dish.
“You have got to try my easy chicken enchilada loaded potatoes for a banging dinner,” she wrote in the clip’s caption.
She added: “Trust me this recipe makes your weight loss goal seem easy peasy.”
For the first step, Alex cut and diced the potatoes into small cubes before adding a tablespoon of taco seasoning, salt, and pepper.
She then air-fried the food for 25 minutes at 190 degrees Fahrenheit, shaking halfway through.
Next, she seasoned a chicken breast with a tablespoon of taco seasoning.
After rubbing in well, Alex pan-fried the meat with the onion and pepper before adding garlic puree and a teaspoon of taco seasoning.
For her next step, she added enchilada sauce with a dash of lime juice and left it to simmer.
Once cooked, Alex topped the potatoes with the chicken and added the cheese and chorizo.
Finally, she popped it under the grill for a couple of minutes until the cheese had melted.
For a finishing touch, Alex topped the dish with spring onion and coriander.
The food expert revealed that the delicious dish only contained 549 calories per serving.
