I’m a budgeting expert… here’s how to make five lunches for £5 – ideal if you are watching your spending
FOOD shopping can be expensive, but one mum has revealed how to make five lunches for just £5.
Mimi, known online as @beatthebudget, uploaded a video sharing her tasty-looking Chicken Burrito Bowl.

Mimi showed how she headed to Asda and picked up 350g worth of chicken breasts for £2.70, six salad tomatoes for 20p, one red onion for 20p and 350g white rice for 45p.
She also bought coriander for 50p and an iceberg lettuce for 55p.
Mimi wrote: “Start by coating the chicken in cajun spice, chilli powder, dried thyme and rapeseed oil. Season with salt and pepper and add to a preheated pan on a high heat.”
She then fried each side of the chicken for three minutes or until they were fully cooked and then sliced them into chunks.
The bargain hunter continued: “Meanwhile, add the diced tomato into a sieve placed over a bowl.
“Season with salt and stir. This will remove the excess moisture.
“Add the rice to a saucepan and cook according to packet instructions.”
Next, she combined the diced tomato, diced onion, and chopped coriander (reserving some for the rice) into a bowl, and then seasoned with salt and pepper and stir to form the pico de gallo.
She wrote: “Add the coriander into the cooked rice and season with salt.
“Once everything is cooked and cooled, serve a portion of rice into each sistema container, then add lettuce, black beans, pico de gallo, the cooked chicken and any remaining coriander to top.
“Refrigerate immediately. When it’s time to eat, enjoy it cold and tuck in!”
Her video has racked up over 33,000 likes and people seemed impressed with her bargain lunch.

It’s not the first time Mimi has impressed with her cheap meals, having previously done a weekly food shop for £20.
