Jeff Gianola makes 1960s 'KOIN Kitchen' jello salad

PORTLAND, Ore. (KOIN) -- During the 1960s, KOIN 6 hosted a show called KOIN Kitchen that sent out monthly recipe booklets.
And in 2024, a viewer discovered one of those old recipe booklets and mailed it to KOIN 6 anchor Jeff Gianola.
The booklet is full of recipes from filling main courses like 'Crown Roast of Pork' to… well you'll see.
Jeff decided to share a recipe, the delicious-sounding 'Margaret's Avocado Jello Salad," and to demonstrate how it was made.

Ingredients:
- 1 package of lemon or lime gelatin
- 1 can of crushed pineapple (save the juice)
- 1 tablespoon of lemon juice
- 1 cup of mayonnaise
- 1 cup of heavy whipping cream (whipped)
- 2 small avocados mashed
- Drop of green food color
Instructions:
- Dissolve gelatin in one cup of hot water
- Add lemon juice to pineapple juice (up to 1/2 cup, adding water if needed)
- Add crushed pineapple
- Add mayonnaise, heavy whipping cream and avocado
- Mix all ingredients together
- Add green food coloring if desired
- Pour mixture into jello mold and let sit overnight.
- Chopped walnuts can be added as a garnish
