Italian restaurant Via Cassia opens in Hudson
HUDSON, N.Y. (NEWS10) -- Originally from California, chef Guy Arnone worked at some of the best Italian restaurants in New York City for 10 years before moving to Tuscany during the COVID pandemic. Once there, he worked at a vineyard before moving back to the states to open Via Cassia in Hudson.
Via Cassia opened in the former Ca'Mea Restaurant space at 214 Warren Street in Hudson on March 14. Arnone said it was turn-key and all they had to do was paint and add decor to the space.
Via Cassia started by only opening for lunch initially, but the restaurant now has it's liquor license, has opened for dinner, and Arnone has expanded the menu.
"The food is very classic in its application," said Arnone. "It's a lot of getting really, really good ingredients and trying to keep it simple to let the ingredients shine."
The menu includes salads, cured meats and cheese, spaghetti, Rigatoni with Sicilian Pork Ragu, Monk Fish Piccata, Grilled Quail Fra Diavolo, Skirt Steak and more. You can view the full menu on the Via Cassia website.
Arnone said the menu changes slightly about once a week to keep up with the seasonal ingredients. Many of the wines available and olive oils used are from the vineyard he worked at in Tuscany.
The Ca'Mea owner still owns the Via Cassia building and the hotel next door, said Anone. He was also able to retain a lot of the staff that worked at Ca'Mea for Via Cassia.
"We're really happy to be in Hudson," said Arnone. "We're new here, but having a staff born and raised in Hudson has been really nice to bridge that gap. Everyone's been really, really supportive."
Via Cassia is open Wednesday through Friday from 5 p.m. to 9 p.m., Saturday from noon to 3 p.m. and from 5 p.m. to 9 p.m., and Sunday from noon to 4 p.m. You can make reservations on the Resy website.
