Jennifer Garner’s Family Creamed Corn Recipe ‘Tastes Like Summer’ & the Leftovers Are Even Better
For those who didn’t grow up eating it, creamed corn doesn’t sound very appetizing. But after watching Jennifer Garner’s most recent episode of Pretend Cooking Show on Instagram, in which her mom Pat costars, even the naysayers will be intrigued. Affectionately called “Grandmom Corn,” the Garner family recipe is sweet, savory, and according to Jennifer, “tastes like summer.” Even if you’ve thought you’d go your entire life without eating creamed corn, you’ll want to give this easy recipe a go.
“My sisters and I grew up on this corn, it tastes like summer,” Garner captioned the episode. “I make mine without sugar and it seems to go down just fine, although of course, my kids prefer when it is made by the queen herself. We love Grandmom. Leftovers are great in tomorrow’s salsa!”
Like any good heirloom recipe, this one came from Pat Garner’s trusted neighbor who came to her one day and said “I’ve learned to make the best creamed corn!” The trick, according to Pat, is that you don’t want to cut the kernels off the cob too deeply — just graze the tops where they’re bright yellow. Otherwise, your creamed corn may have a toughness to it.
When the kernels are cut off the cob, you scrape the juices of the cob into the bowl with the kernels to add extra creaminess to the dish. Then it’s time to transfer everything over to a skillet on the stove and add a splash of water and a few pats of butter to begin tenderizing the corn. Add salt, pepper, and white sugar to taste.
Using milk and flour, create a slurry to thicken the creamed corn sauce to your liking. “Once kernels are a little more than al dente, add slurry,” Garner’s recipe reads in the caption of her post. “You probably don’t need all of the slurry, just enough to thicken it. We used half.”
Cook the corn for another minute or so and then you’re ready to eat! It makes a delicious side or you can eat it as is for a little comfort food pick-me-up because it turns out that creamed corn can actually be super delicious. Sorry to all you naysayers — you’ll have to take the L on this one.
