Katie Lee Biegel’s Cheesy Stuffed Croissant Recipe Turns Store-Bought Pastries Into Ooey-Gooey Breakfast Treats
If you’re looking for a recipe to keep on hand for those days when you wake up hungry — like really hungry — then Katie Lee Biegel has just the thing. Her Cheesy Gruyere and Caramelized Onion Stuffed Croissant recipe takes store-bought croissants and turns them into ooey-gooey goodness and, as Biegel wrote in the caption of her recent Instagram post sharing how to make this breakfast treat, these croissants are “truly the best thing.”
To make this dish, start by baking or warming up your croissants. You can use those croissants you find already baked in your grocery store’s bakery, or you can buy the frozen variety and bake them yourself.
While those are in the oven, make your caramelized onions. Melt a bit of butter in a frying pan and add in your sliced yellow onions, stirring frequently for about 35 to 40 minutes while they brown and become soft. Season the onions with salt and pepper, and stir in some thyme in the last few minutes of caramelizing.
Next, you’ll make the gruyere bechamel sauce. Heat butter in a medium skillet and then whisk in flour to form a roux. Cook and whisk the roux paste for about a minute before slowly streaming in milk and continuing to whisk until everything is smooth, adding salt and pepper to taste. This mixture should thicken up in about two or three minutes, and when it does, add in your shredded gruyere and let it melt in the sauce.
Finally, it’s time to assemble. Cut your croissants down the center and stuff them with the onions, a heaping spoonful of the gruyere sauce, a sprinkle of grated parmesan, and more shredded gruyere. Bake these croissants under the broiler for a minute or two, then drizzle with honey, and you’re ready to eat.
