Chris Sanders, hydration expert at Radnor Infusions, shares why this secret ingredient is the key to fluffy pancakes and explained: “As sparkling water is carbonated, it naturally aerates the batter.
“Sparkling water retains fizz for much longer, so when this gets in contact with heat it will form small bubbles in the heat-setting mixture to create fluffy pancakes.
So if you want fluffy pancakes that are flavourful and light, make sure you have some sparkling water to hand.
You can even add flavoured sparkling water, to give pancakes an extra punch of flavour.
So if you want your pancakes to impress, here’s a simple recipe for you.
For four servings, add one cup of self-raising flour, two ½ tsp salt and five tbsp sparkling water into a bowl.
Whisk until smooth and then gradually stir in ½ cup milk of your choosing.
Then leave the batter covered for 20 minutes – the batter should then be quite liquidy.
You’ve then got the perfect batter for the fluffiest pancakes!

Heat some vegetable oil in a frying pan and add around ¼ of the batter.
Ensure the batter is distributed evenly and after 30 seconds carefully flip over with a spatula to cook the other side until golden brown.
Repeat until all the batter is cooked.
Add the toppings of your choice and voila!
