I’m a chef & my Pancake Day recipe’s the best EVER, says Gizzi Erskine as she shares how to elevate your Shrove Tuesday
A CHEF has shared her top tips to elevate your Shrove Tuesday by making the best pancakes “under the sun”.
Gizzi Erskine explained that she’s “tried and tested” it a “million times”, and it has now become a recipe she can rely on year after year.
She first tested it out when she was a cookery assistant at the BBC Good Food magazine, and used to “make thousands of pancakes for all the BBC staff on the morning of Shrove Tuesday”.
“And I got asked back to do it year after year!” she added in her video on TikTok.
Gizzi added that her recipe makes the best “British style” pancakes, and she’s gets “really sad” when she sees people prepping American breakfast-style pancakes for the big day.
“British pancakes are like a crepe but they’re smaller and slightly thicker,” she explained.
“They get lacy on the one side and then they’re brown and bubbly on the other.”
To make Gizzi’s pancakes, mix together 110g plain flour with a pinch of salt and a large pinch of sugar.
Mix in one large egg, and one large egg yolk, into the dry ingredients, and then quickly whisk in one tablespoon of melted butter and 300ml of milk.
Make sure your small crepe pan is hot, and melt some butter on it, before pouring on the pancake batter and frying until cooked.
Serve hot.
“While there’s millions of cool toppings, the king of toppings is simple – lemon and sugar,” Gizzi said, as she tucked into hers.

Makes 5-6 British style pancakes
Ingredients:
110g plain flour
A pinch of salt
A large pinch of sugar
1 tbsp melted butter (or oil)
1 large egg, plus one large egg yolk
300 ml of milk
Butter/ghee/oil for frying
Method:
Mix your dry ingredients.
Mix your eggs into the dry and then quickly whisk in the butter and milk.
Fry by getting your small crepe pan hot and wiping it with butter.
Fry the pancakes.
Serve hot with the toppings of your choice.
